Description
"Juyondai Ararashi Kamijiroshiro Junmai Daiginjo" is a sake produced by Takagi Shuzo in Yamagata Prefecture. It is characterized by its luxurious ginjo aroma and fresh fruity flavors, with a delicate and refined mouthfeel. Elegant notes of white peach and honeydew melon gently drift through, while a refreshing acidity sharpens the sweetness. Bottled in its unpasteurized and undiluted form, the sake retains a vibrant freshness, rich umami, and a slight effervescence due to the continued interaction of residual sake lees and yeast. This results in a well-balanced and highly drinkable sake.
"Ararashi" refers to the first-pressed portion of the moromi (the fermented mash of rice, yeast, and other components) after fermentation is complete, capturing the sake's freshest and most dynamic expression.
