Description
The "Juyondai Extra Banshu Hakutsuru Nishiki Junmai Daiginjo", produced by Takagi Shuzo in Yamagata Prefecture, has been upgraded to the 2024 EXTRA version, with the rice polishing ratio refined from 45% to 40%. This enhancement results in a more delicate mouthfeel and an even richer ginjo aroma.
Hakutsurunishiki, sharing the same lineage as the renowned sake rice "Yamada Nishiki", produces sake with a deep, complex flavor and a smooth, velvety texture. It offers notes of honeydew melon, green apple, and sweet, luscious fruit, complemented by a refreshing citrus aroma and an elegant rice fragrance, with a long, lingering finish.
Currently, aside from Takagi Shuzo, only Hakutsuru Sake Brewery and Sumikawa Sake Brewery use Hakutsurunishiki for sake brewing. Its cultivation remains primarily concentrated in Hyogo's Special A District, the same prestigious region where Yamada Nishiki is grown.
