  • Description

    Crafted using Juyondai's secret brewing technique known as "Hiden Tama Gaeshi", this sake incorporates the unique addition of Kasutori Shochu (a type of shochu distilled from sake lees). Kasutori Shochu is made by distilling the lees left after brewing sake with a 35% rice polishing ratio, resulting in a very rich, full-bodied alcohol. This shochu is then reintroduced into the sake to adjust its flavor profile, imparting a Ginjo aroma that requires great skill from the Toji (master brewer).

     

    The special sake is named "Honmaru", which in Japanese refers to the center of a castle, symbolizing the core or essence of something. The sake begins with delicate notes of melon and banana on the nose, with a fresh, sweet taste. As you savor it, the flavor transitions into a round, full-bodied profile, and a subtle spiciness gradually emerges, leaving a lasting finish. This version of "Honmaru" offers a cleaner, more refreshing taste, enhancing the overall experience.
