"Juyondai Nakadori Chogoku Junmai Daiginjo" is the latest version of the super premium series, upgraded from Super Tokusen to Chōkyoku. Made with the "King of Sake Rice", Yamada Nishiki, polished to 35%, it exudes a bold aroma of honeydew melon and apple, with a sweet, full-bodied fragrance and a smooth, layered mouthfeel.
Yamada Nishiki is primarily used to create luxurious, aromatic ginjo sake, which is one reason it is highly favored by sake brewers, as sake made from this rice has a high rate of winning awards.
Nakadori refers to the technique where, during the final pressing process of sake brewing, only the middle portion of the pressed sake (the most refined and purest part) is collected. The production of Nakadori varies each year, depending on the aging conditions and the brewer’s judgment. The sake is only released once it has reached the desired level of maturation, making it an extremely rare and limited edition.
